Kısır is one of the indispensable flavors of Turkish cuisine. It is possible to eat Kısır in nearly every house in Turkey. Almost everyone knows this simple and delicious recipe. But not everyone can do it very well. what's the reason? Of course, the quality, variety and taste of the ingredients. Most of the ingredients belong to Mediterranean and Southeast Anatolian cuisine. Especially if the tomato paste and pomegranate syrup are from the city of Hatay, it would be very good. Now let's take a look at the materials.
2 cups bulgur
tablespoons of tomato paste ( domates salçası)
1 tablespoon of chili paste ( biber salçası )
Half a glass of extra virgin olive oil
2 large tomatoes
2 cucumbers
Half a bunch of spring onions
Half a bunch of parsley
few leaves of fresh mint
juice of a lemon
2 tablespoons of pomegranate syrup ( nar ekşisi)
a teaspoon of salt
A teaspoon of ground hot chili pepper
Let’s see the process
Put the bulgur in a large glass bowl. Pour a glass of hot boiled water over it and let it sit for half an hour. While waiting for bulgur, let’s chop the tomatoes and cucumbers into cubes. Finely chop the parsley, mint and spring onion. Add paste, lemon juice, pomegranate syrup, salt and hot pepper into bulgur and mix well. Let the bulgur mix until it turns red. Next, let’s add the chopped ingredients. Add olive oil last and mix. Our Kısır is ready. Afiyet olsun . I mean enjoy your meal ☺️
